Roast Beef Fried Rice


Fried rice is one of my favorite food. It's an easy way to use up left over meat and rice. I made roast beef fried rice using left over roast beef from Christmas and day old rice. It was so easy to make and super tasty too!

End of The World Meal


The world was supposed to end on December 21, 2012. I woke up that morning and cooked the best meal I could think of. Pancit Canton! It's a instant noodle dish that comes in package with powder flavor packets as well as oil and soy sauce. Probably not the healthiest, but it's the most delicious! Been eating it since childhood. So, El Hubby Cakes and I ate it as we wait for something crazy to happen. Lucky...nothing happened and the world is still here ^_^.

Late Night Spinach Omelette


I just had to do a post on this gorgeous omelette. I made it one night when I got home from work extremely late. I was tired and hungry. I could've gone to a near by Jack in the Crack to get my favorite nasty dollar tacos, but I wanted something fresh and homemade so I opted to cook my own food instead. Made a spinach omelette with tomatoes and topped it with chunks of avocado. Definitely better than fast food!

Lupe's Homemade Pozole

Went to my friend Lupe's potluck party last Saturday. I always look forward to her potlucks because she gets down in the kitchen and I get to eat one of the most amazing homemade food I've ever had. See more of her cooking HERE and HERE.

 This time she made Pozole and Chicken Enchiladas. I gotta be honest. I'm not a big fan of Pozole. I hate the corn or hominy in it with a passion. Got traumatized when I was a little kid. Long story. But I hate it. Other than that, I love the rich broth with all the fixings on the side such as shredded cabbage, sliced radish and lime juice.

El Hubby Cake's 28th Bday

Assuuuss...El Hubby Cake's turned 28. Assuuuss...

Asus is a made up word. It means Awww....

I asked what he wanted to do for his birthday. He replied, "Nothing! Absolutely nothing". So that's exactly what we did. But I insisted to take him out for lunch. My treat!

I picked Rock N' Fish based on Yelp reviews. It's a seafood bar/restaurant  located on Manhattan Beach. It's located on the strip and is only a block away from the pier so it's hard to miss. The photos on Yelp looked really good so  was quite excited to try it.

Complimentary Sourdough with butter. I just love free bread at restaurants. 

Crab Cakes for appetizer. This is how crab cakes should be, all meat with little breading. So fresh and light.

Kiko's mom had the Seafood Jambalay in Linguini. She loved it and so did I. The sauce was very flavorful and the seafood was very fresh. I will get this next time!

Kiko had the Crusted Mahi-Mahi with spicy mac n cheese and sweet potato fries. Don't be fooled by the photo. The fish looked bigger in person. It was so flaky and meaty and fresh!

My choice was grilled Ahi Tuna with spicy mac n cheese n sweet potato fries. OMG! Again, it's fresh! Definitely something I'll get again. I just wished the mac n cheese was more spicier.

Complimentary Bread Pudding for Kiko. It's a huge portion of bread pudding soaked in a sweet rum sauce. Yum!

Yelp didn't fail me. Rock N' Fish is awesome. We will definitely come back again.

The Best Stuffing Ever!!!

In case you didn't know, I got married this month. Read about it HERE. That explains the lack of post.  I've also been working like a dog and literally have no time to blog. But I'm back. It's my day off today and I'm spending my Saturday night with you!

I hope you all had an awesome Thanksgiving. Mine was nice and calm. I spent it with El hubby cake's family for the first time. El hubby cake's sisters has a tradition where they get together to make the food. They start as early at 5am to prep and cook. Everything came out so delicious, especially the Turkey and Stuffing. It was the best stuffing I ever had! 


My beautiful plate. And yes, that's a guacamole on my plate. It is a Mexican household afterall ^_^.

My super yummy Spinach Dip. Making it this time around was much easier and faster. I used my super cool new hand mixer and it mixed the ingredients super quick!

I call this Thanksgiving Guacamole. It looks so pretty on a maple leaf bow.

Nena's Famous Stuffing. Finally, I was able to try it. I've been hearing about it for many years. Well, it defnitely lived up to it's hype because it was bomb!!! It's my first time trying stuffing with gizzards. I like it a lot. I also like the bits of corn bread in it that made it a bit sweet.

Store bought ham.

The19 lb Turkey. They did such a great job in cooking it. It was very moist and tender. Very delicious! It was more than enough to feed all 11 of us, plus just enough leftovers to take home.

For dessert, we had pumpkin pie from Costco and Gaby's homemade jello...I forgot the name. It's a layer of jello, cream and a walnut crust on the bottom. Yum!

Semi-Homemade Korean Bulgogi Dinner


These pictures were from 3 weeks ago, but I still want to share. I cooked a semi-homemade Korean Bulgogi dinner for my husband to be and I. Gosh, it's weird calling him my husband. We have less than 3 weeks before the wedding and I want to get used to calling him that haha. I went to a local Korean super market and I was inspired to make a Bulgogi dinner. I bought a few lbs of beef brisket and made my own marinade. You can find the marinade recipe HERE. It's really yummy! Oh and I also bought kimchi dumpling, seaweed salad and dried squid to make the dinner complete. Yum!

Kimchi Dumplings. It's filled with kimchi and rice. It was spicy and sour.

Seaweed Salad and Dried Squid. These are my favorite banchan (side). The seaweed is a bit sweet and refreshing while the dried squid is my gummy and spicy.

Thinly sliced beef brisket marinated in soy sauce, sesame oil, garlic, sugar, onion and white sugar. I cooked it on a non stick pan and ate it with salad and a little rice.

Grilled Godornices and more...

I almost forgot to post these photos. It's from the late birthday of my brother in law to be. We decided to have a BBQ for him. We had grilled godornices or cornish hens, guacamole, pico de gallo, and Mexican rice. I marinated the godornices in soy sauce, sprite, sugar, pepper and vinegar. This marinade would work with chicken too. It would have been better if the godornices marinated over night for more flavor, but we only had 3 hours to prep before the BBQ. It still came out good though. It just got charred a little too fast on the grilled because of the sugar O_o.

Semi-Homemade Spicy Korean Ramen ^_^

Brunch: Semi-homemade Spicy Korean Ramen with shrimp gyoza, mushrooms, chopped avocado, hard boiled egg and seaweed paper. I used an instant spicy Korean Ramen noodles from our local Korean super market and dressed it up with whatever I had in the fridge. It was very filling, delicious and looks pretty too!

Brunch Al Fresco

Last week, Kiko and I had a lovely brunch at our favorite breakfast place, Wildflower Cafe in Redondo Beach, Ca. Remember the best hot chocolate I kept talking about HERE? Of course, I had to order it again along with a huge bagel breakfast sandwich and a side of pancakes. Yum!

Banana and Walnut Pancake. 3 stack of fluffy pancakes stuffed with lots bananas and walnuts. Every bite had banana and nuts. I loved it! Oh, and I didn't eat it all by myself. I was very hungry, but not greedy ^_^. Kiko helped me finish it.

My egg and cheese bagel sandwich. It made me laugh when Kiko said, it's not "Becky type food". He's not used to seeing me order a dang sandwich! Fluffy eggs with swiss cheese on a toasted everything bagel with a little mayo. Very simple yet delicious. So good! 

My hot chocolate with whipped cream and Kiko's cappuccino. Just like last time, it was yummy and had the perfect temperature. We were able to enjoy it right away.

Kiko's breakfast sandwich. Eggs, real turkey bacon, cheddar cheese, lettuce, avocado on a croissant. I had a bite and it was a little better than mine lol...just because of the avocado lol. Should've gotten avocado too!

It was such a lovely day, we just had to dine al fresco.

I can't wait til we come back. Next time, I'm going to try other stuff :)

Chicken Salad with Nectarine and Avocado

It's that time again to cut back on the fattening food and watch what I eat. My wedding is 2 months away so I gotta make sure I fit the dress right? Oh and don't mind my last post on a buffet brunch. It was a loooong time ago. For the past week, I've been eating less carbs, sugar and fat. I hope I keep it up til the big day.

 I made this a big plate of chicken salad last week. It has shredded chicken, spinach, spring mix lettuce, nectarines, avocado in a light raspberry and pomegranate dressing. It was light yet filling at the same time. Yum!

El Torito Grill Sunday Brunch

These photos are suuuuper old, but I still want to share. We went to El Torito Grill on a Sunday. We wanted to grab a simple lunch, but we ended up with their big Sunday Brunch lol. We didn't know it was all they serve on Sunday morning til a little after noon so we pretty much had no choice. We didn't regret though. There was a variety of food to choose from and everything I had were great!

I didn't take a photo of the buffet station, but it was very clean. They had traditional Mexican and American breakfast, made to order tacos, seafood table, salads, pasta, desserts and etc.

I had to taste a little bit of everything O_o. Everything was very good, but my favorite would have to be the Tacos Al Pastor. So bomb!

10 Year Anniversary Costco ^_^

Kiko and I turned 10 years together on August 20. That's right, 10 freakin' years!!! Since we're getting married in November of this year, we decided not to make a big deal out of it lol. But ofcourse, it's still a special day. So, I treated him to a big lunch at Costco. We had a chicken panini sandwich, chicken bake, polish dog and a strawberry sundae, all for under $20. Baller!!!

I love Costco food court. They have the best cheapest fast food ever. Don't you agree?

Sweet and Sour Chicken with Peaches

It's supposed to be sweet and sour chicken with pineapples. I didn't have any in the pantry, so I opted for peaches instead. It came out pretty good, but it's not as sweet as I wanted to be. It's great paired with steamed white rice. Yum!

Birthday at Lucille's BBQ

A week ago, Kiko and I took his brother out for his birthday. We asked him to pick a restaurant and he picked Lucille's Smokehouse BBQ! It's been awhile since I had Lucilles, so I was quite excited. It's also really close to my work so all I had to do was walk back after my lunch break lol. 

I had the BBQ lunch platter from their lunch specials menu. It has baby back ribs, tri-tip and a hot link with a side of honey roasted peanut slaw. Everything was good and it's the perfect portion for me. I was able to finish everything without being too full. 

Baby Cakes had the Big Easy BBQ Shrimp. Sauteed shrimp in seafood BBQ sauce. The shrimp was succulent and tender and the BBQ sauce was a bit tangy. I like it.

Kiko's brother had a full rack of baby cake ribs. Sorry, I didn't take a picture.

His niece got corn dogs from the kid's menu. Cute right?

Complimentary Biscuits with yummy whipped butter. Soooo good!
