10 Year Anniversary Lunch....at Costco ^_^



Kiko and I turned 10 years together on August 20. That's right, 10 freakin' years!!! Since we're getting married in November of this year, we decided not to make a big deal out of it lol. But ofcourse, it's still a special day. So, I treated him to a big lunch at Costco. We had a chicken panini sandwich, chicken bake, polish dog and a strawberry sundae, all for under $20. Baller!!!


I love Costco food court. They have the best cheapest fast food ever. Don't you agree?





Sweet and Sour Chicken with Peaches


It's supposed to be sweet and sour chicken with pineapples. I didn't have any in the pantry, so I opted for peaches instead. It came out pretty good, but it's not as sweet as I wanted to be. It's great paired with steamed white rice. Yum!

Birthday at Lucille's BBQ

A week ago, Kiko and I took his brother out for his birthday. We asked him to pick a restaurant and he picked Lucille's Smokehouse BBQ! It's been awhile since I had Lucilles, so I was quite excited. It's also really close to my work so all I had to do was walk back after my lunch break lol. 


I had the BBQ lunch platter from their lunch specials menu. It has baby back ribs, tri-tip and a hot link with a side of honey roasted peanut slaw. Everything was good and it's the perfect portion for me. I was able to finish everything without being too full. 



Baby Cakes had the Big Easy BBQ Shrimp. Sauteed shrimp in seafood BBQ sauce. The shrimp was succulent and tender and the BBQ sauce was a bit tangy. I like it.

Kiko's brother had a full rack of baby cake ribs. Sorry, I didn't take a picture.


His niece got corn dogs from the kid's menu. Cute right?


Complimentary Biscuits with yummy whipped butter. Soooo good!

Pork Bistek



Normally, Filipino Bistek of Bistek Tagalog is cooked with thinly sliced beef. But since I didn't have beef in my fridge, I opted for pork chops instead. Still came out very delicious especially served with steamed white rice.

Simple Dinner: Sauteed Keilbasa and Onions with White Rice



This bowl of sauteed keilbasa and onions was inspired by one of Divascancook cooking videos on Youtube. I love her videos. She's so funny and bubbly. You can watch her video recipe below. My version had a table spoon of hoisin sauce to add a hint of sweetness. It went very well with white rice. Yum!







Stress Reliever...Baked Ziti



Baked Ziti with Ground Beef and Mushroom Ragu.

I love to cook because I love to eat. But I also love to cook because it's a great stress reliever. Something unexpected happened to me last week that totally crushed my world. I don't want to get into details, but it's one of those horrible things that I thought would never ever happened to me. It made me painfully depressed and extremely stressed out. Thank you for my Kiko, family and friends for being so loving and encouraging. You guys really lifted my spirits up. Instead of sitting and moping around and getting sad, I decided to cook! I got up, prepped the ingredients and came up with baked ziti with ground beef and mushroom ragu. It felt comforting as I whisked the butter, flour and milk nice and slow for the bechamel sauce. After I was done cooking, I had this huge smile on my face. The baked ziti looked beautiful in the pan with the bread crumbs and Parmesan cheese toasted on top. And what made me smile even more was the taste. It was delicious. The bechamel was really creamy and the ground beef and mushroom made the dish very hearty and yummy!

Roasted Balsamic and Mustard Chicken



I just made this for lunch! Isn't is pretty? It's roasted chicken thighs marinated in balsamic vinegar, mustard, olive oil, dried parsley, lots of garlic, salt and pepper. I did a quick sear on a hot pan to get the skin crispy, then I baked it in the oven for 25 minutes to finish cooking. It came out so good, super juicy and flavorful!



Those drippings are so good on top of the white rice!



Birthday Ceviche!



Kiko and I spent a lovely afternoon with his family to celebrate his brother's birthday. His other brother made shrimp ceviche, which is the birthday boy's favorite food. 


Sorry I don't have a recipe, but from the photo it has shrimp, imitation crab meat, shredded carrots, cucumber, mango, thinly sliced red onion, and lime juice. Kiko's brother makes it really delicious!


And this is how they taught me to eat it. Slather mayonnaise on a tostada shell then top it off with the ceviche and avocado. It's so delicious!

Wildflower Cafe, Redondo Beach...Best Hot Chocolate!



 I think we might have found our new favorite breakfast restaurant. Kiko and I dined in at the Wildflower Cafe in Redondo Beach, Ca. Thanks to Yelp.com for recommending this place. It's a cute and small spot with a patio seating. I read this place gets packed, so we went on a Monday morning as soon as they opened. 

We were greeted and seated right away by this super nice Asian lady. She was very friendly and gave us great service. I like how she let us took our time to order and she checked up on a few times to make sure were okay.


Here's what we had...



We started our meal with a Hot Chocolate for me and Mocha Latte for Kiko. This beautiful cup is the best hot chocolate I've had in a long time. It's not too sweet or too chocolatey, the whipped cream is homemade and the temperature was perfect. I was able to drink it right away. Kiko also enjoyed his Mocha. He is quite particular with Mocha and he didn't say a word after a sip. Quiet means he loves it.


I had the Wildflower Stack. 3 stack of thick homemade buttermilk pancakes stuffed with bananas, blueberries, strawberries and walnuts. It was amazing!!! It was light and fluffy and love how they were very generous with the fruits.

I got a side of roasted potatoes. Oh gosh, they were perfect; just the way roasted potatoes should be. They were well seasoned, hot, crispy with little burnt edges on the outside and soft on the inside. I could eat it on it's own and be happy. 


Kiko had their Eggs Benedict with a side of roasted potatoes and a fruit cup. I was able to get a bite and it was delicious. I like the thick cut ham and the homemade hollandaise sauce.




Overall, we really love Wildflower Cafe. We will definitely come back. I want their hot choclate again! Just keep in mind that the parking only fits 3-4 cars, so be prepared to find parking in the street.

Bagels for Days!



Kiko and I has been eating a lot of bagels lately. We like egg bagel, blueberry bagel and everything bagel! This is the bagel sandwich I made for breakfast a few days ago. It has ham, cream cheese and sunny side up egg in an everyday bagel. It was so yummy!!!





Red Barron Frozen Pizza is pretty darn good!!!



You know what's good? Red Barron pizza. It's very flavorful and it doesn't taste like cardboard. You can find it at the frozen section in your local grocery store. It was on sale at Vons for $2.50. I liked so much that I went back the next day and picked up some more!

This is the supreme pizza with original crust. I added cooked ground beef and chopped bell peppers for more toppings!

Becky's Version of a Jambalaya


Did my own version of a Jambalaya with ingredients I had in my fridge. I looked up a recipe video on youtube and I had no idea how easy it was. I wished I had shrimp though. It would have been so much better with shrimp!

My version had ground beef, kielbasa, carrots, celery, onion, bell peppers, rice, beef broth and spices ^_^. Kiko loved it and even ate it for breakfast the next day!






Thai Express Food To Go...I've had better!

During one of my no cooking day last week, I decided to order Thai food. I googled who delivers  around my area and one of the first ones that popped up was Thai Express Food To Go. I decided to give it a try. Meh...Never again! The flavor was just alright and they were very stingy on meat. 

Here's what I had...

Pad Thai. There were only 2 shrimp and a few strips of chicken. Stingy. The flavor was alright. I've had better.


Seafood Medley. OMG for $10, this was a waste of money. There were more vegetables than seafood. And it was too spicy to enjoy. I asked for mild!!!


Dinner Special: Rice, Chicken Satay and Beef Curry. Ok, this was pretty good. The chicken was tender. But again, they were stingy on the meat. There were only a couple of strips of beef O_o.

Steak and Shrimp Marsala



A quick and easy dinner I made a few weeks back was seared steak and shrimp marsala. Does it match? Sure it does! I bought a bottled marsala sauce from Fresh and Easy and poured it on cooked shrimp instead of chicken or beef as suggested in the bottle. I t was delish!
