Pesto Paradiso what I had at Islands Restaurant a few weeks ago. It's a chicken sandwich with grilled chicken, jack cheese with basil pesto, lettuce and tomatoes. Usually, I would order their Bluenami, which is a blue cheese burger, but this time I decided to try something different. Why not chicken?

Well, I'm glad I tried it because it's was really good. The grilled chicken breast was perfectly cooked. It was soft and super juicy and the basil pesto compliments it very well. I also love their bun. It's soft yet it didn't break and it was able to hold everything. Oh, and I can't forget their amazingly delicious french fries. They're are super crispy and so addicting. I'm glad it's unlimited ^_^

Shrimps and Pancit for Auntie Abeng's Birthday!

On the 25th of this month, we celebrated my Auntie Abeng's birthday by making a huge batch of Sweet Chili Shrimps, courtesy of my cousin's recipe (thanks kuya Carlos) and Pancit, a Filipino noodle dish. We always have noodles for birthdays because it represents long life and we do want more birthdays to come for my aunt right?

We usually cook Shrimps in lime soda like Sprite and pineapple juice, but my cousin convinced my mom to change it. Instead, my mom used his recipe. The Shrimps was cooked in butter, lots of garlic and a whole bottle of sweet chili sauce. OMG it was delicious. It was sweet, garlic-y and a bit spicy. It was so good with steamed white rice because it soaked up the sauce.

 This is the meat and vegetable for the pancit. She cooked a lot because my aunt wanted tons of meat in the noodles.

We had so much leftovers to eat for 2 days lol. I didn't mind because it tasted even better the next day.

Crabs, Salmon, Tiramisu, Red Velvet and Balloons

Kiko and I had a really fun time at his sister and sister in law's birthday last week. I ate a lot O_o. I couldn't help it since everything was so delicious. Kiko's older sister prepared and cooked everything. She's an amazing cook. She made crabs, baked salmon, salad, sauteed portebello mushrooms and asparagus. Kiko and I along with the kids helped a little, but she pretty much did all the work ^_^.

Here's what we had...

Sauteed Asparagus and Portebello Mushrooms cooked  in olive oil and garlic with a little bit of salt and pepper.

 I love this salad. There's no name for it, but it has mixed greens, tomatoes, avocado slices, orange, red onion, peaches and croutons. The dressing we used was a raspberry vinaigrette by Marie Callenders. Tangy and Sweet ^_^

Baked Salmon was perfectly cooked.

Thanks to Kiko's brother for bringing these fresh huge crabs.  I like crabs but I never enjoy peeling and cracking them. It's too much work lol.

Kiko went to King's Hawaiian for the cakes. They make really good cakes.

Dinner: Costo Margherita Pizza

Pizza is what's for dinner tonight. We bought an extra large frozen Margherita Pizza from Costco for only $9.99. We cooked it in the oven and it fed 5 of us in the house including my dog Neni ^_^. It was delicious. You gotta love Costco!

We added fresh Mozzarella cheese and more tomato slices.

Grace, Morris and I hung out a while back and went to California Pizza Kitchen or CPK for dinner. I don't even rememebr if I had CPK before. I think I did. I'm not too sure though. We went to the one by UCLA on a Saturday night and it was packed with students and their parents lol.

The three of us share all these food.

Chicken Fetuccini in Tequila Cream Sauce. The sauce was delicious. However, the pasta was a bit soggy and sticky, and the chicken was over cooked O_o *shakes head* We didn't complain though.

 Thai Chicken BBQ Pizza. It was sweet and savory. Yum!

Fat Fish Happy Hour $2 Sushi Pt. 2

A friends and I went to the rotation sushi place, Fat Fish in Korea Town. This is our second time and its becoming a new favorite sushi joint. Everything is only $2 during happy hour starting 7pm. It's not the best sushi and the portion is quite small, but it's decent enough to keep us coming back. I've blogged about this place before and you can read it HERE.

Salmon with Mango and Jalapeno salsa. It was really good. The salmon wasn't over cooked.

Seaweed Salad. Mmmm soo good! 

 Fried Breaded Salmon with Udon.

The total of my bill came out to be $14.  Not bad right? If you're broke like me, you should try this place to get you sushi craving fixed.

Fourth if July 2011 BBQ ^_^

Fourth of July!!! What did you guys do? It was sooo hot over here in L.A. and my family and I initally wanted to go to the beach. But after my grandma's accident, we opt to just stay at home and BBQ. My aunt prepared and cooked all the food. We had grilled Shrimps, Pork and Chicken BBQ Filipino style, Steak, Tilapia, Corn and Buko Salad (Filipino Coconut Salad).

Sorry for the ugly photo of the grilled Tilapia, but I can tell you that it was delicious.

I guess you would call this Filipino Salsa??? It has chopped tomatoes, onions, raw mangoes, sea weed and liquid anchovies. It goes very well with the BBQ and rice.

 Corn were on sale at Ralphs for 5 for a $1, so my aunt bought a whole bunch to grill. They were so sweet and creamy.

 My mom ate crabs left overs from last night. 

Yummy Buko Salad for dessert. This is a very popular Filipino dessert. I like it when my aunt makes it because it's not too sweet and she put lots of fruits and young coconut meat.

My aunt marinated the meat over night. I need to get her recipe because it's really good. 

I went to Kiko's family in the afternoon for the fireworks show. His brother go all out with fireworks every year, so I couldn't miss it. They also had BBQ and his sister decorated the back yard with red, white and blue! It was really nice. 

Kiko fixed me a BBQ Chicken plate with Macaroni Salad, Cactus Salad, Mexican Rice and Pinto Beans.

And they had a huge cake of Tiramisu for dessert! I love Tiramisu. One of Kiko's sister got it from Albertsons. I've mentioned it before that Albertsons makes good cakes. They really do!
