I just made this for lunch! Isn't is pretty? It's roasted chicken thighs marinated in balsamic vinegar, mustard, olive oil, dried parsley, lots of garlic, salt and pepper. I did a quick sear on a hot pan to get the skin crispy, then I baked it in the oven for 25 minutes to finish cooking. It came out so good, super juicy and flavorful!
Those drippings are so good on top of the white rice!
