This Mexican Chicken Frittata is far by the most beautiful food I've ever made. I can stare at these photos for hours.
Its eggs with tomatoes, shredded chicken with spices like chili powder, oregano and garlic powder baked in the oven, then topped with cilantro and cool avocado.
Kiko and I ate it with blueberry pancakes. I know sounds like an odd combo, but we love pancakes with anything.
