House Warming Feast!

Potlucks are one of my favorite things to do with friends. I used to hold random potluck dinners back in college. It was a great way to get everyone to get together and hangout after finals or for no particular reason at all. A lot of them never even knew what potluck was  until I organized it  ^_^. 

Last week, my friend Jackie had a potluck/dinner at her new apartment.. I suggested the idea of having a potluck so she shouldn't have to fuss over cooking and organizing dinner for friends. Heck, tell everyone whose coming to bring something right? There was no theme for the party. Friends can bring whatever they want. It can be cooked or store bought, it didn't matter!

Initially, I was going to make Chicken Lumpias (filipino egg rolls) but it was too time consuming so I switched to Longganisa. They are Filipino sausages made from pork. They are sweet and spicy and, it's one of my favorite Filipino food. My family never serve longganisa for parties. We usually eat them for breakfast with garlic fried rice and fried eggs. But I decided to make them for the potluck because it was suuuper easy to cook and they would be the perfect appetizers once they're cut into bite size pieces and poked with tooth picks ^_^

I boiled these babies in water for at least an hour just to make sure they were thoroughly cooked. Then I cut them into bite size pieces then transferred in another pan to get toasty and caramelized.

Omgooolay! So much fat came out from them lol.  I had to drain them in paper towels to get rid of excess grease!

I placed them on an aluminum pan and placed some fancy looking toothpicks on each and they're done! They're super cute aren't they?

Jackie's Frijoles cooked in clay pot. She mashed them and put a little bit of soy sauce in it. I know it sounds weird but it was really good. It makes you go "hmmm..what is that?" in a good way ^_^


This was our beautiful spread. Jackie made the Mexican Rice, Soy sauce Beans and Guacamole which were superb. Laura made the Quiche which was really bomb! We couldn't get over how good it was. It had spinach, eggs, cheese and I dunno what else. It was very comforting. She got the recipe from her sister who went to a french culinary school. Then, Jackie's sister made the Stuffing, Biscuit and the Carne Asada and the rest brought drinks and stuff ^_^

 There's nothing better than a homemade Guacamole with tortilla chips. Jackie made it very lime-y and cilantro-ey (those are not even words lol) which I loved!!! It was addicting and everyone enjoyed it.


This was my plate and I made sure I got a bit of everything. My Picasa is acting up so that's why the photo looks like this. It wouldn't rotate O_o but you can still see the food so yyeeaaah! I got rice, stuffing, carne asada taco, guacamole, soysauce beans and quiche. Everything was delicious. I couldn't complain.

It was a successful potluck/dinner. More people came than expected and surprisingly, everyone got fed and there was still left over food. Next time, I'm gonna ask one of my friends to hold a potluck just because...just because it's fun and stress free because you don't have to worry about the food so much, just the clean up afterwards lol!!
