I got the recipe for the sweet and sour sauce from a Filipino celebrity, Tuesday Vargas (Tuesday_V). I follow her Instagram and she post her home cooked recipes all the time. She's always cooking up a storm and her food looks really good. This taste taste so legit, it will knock your socks off! You can use this sauce with any meat. I used it with chicken because that's what I had on hand.
Ingredients:
- 2 of tomato paste
- 2 tbsp of vegetable oil
- chopped onion
- choped garlic
- chopped ginger (you can use the ginger puree from the grocery store)
- 1/2 cup vinegar (use can use white, red wine or rice wine)
- juice of half a lemon
- 2 tbsp sugar
- chopped carrots
- bell peppers
- a medium can of pineapple chunks and little bit of it's juice.
- In a sauce pan, heat the oil and sautee onions, garlic and ginger until fragrant.
- Add 1/2 cup of vinegar, lemon juice, 2 tbsp on tomato paste and 2tbsp of sugar and season with salt and pepper.
- Mix and let it simmer for a few minutes.
- Add pineapple chunks and it's juice
- Add carrots and bell peppers.
- Cover and let the carrots and bell peppers cook for a few minutes.
- Pour on any cooked meat.
- Enjoy!
